Enzyme engineering (or enzyme technology) is the application of fermentation process using catalytic activity of isolated enzymes, to produce new metabolites or to convert some compounds into another's (biotransformation). These products will be useful as chemicals, pharmaceutiacls, fuel, food or agricultural additives. Enzyme reactor consists of a vessels, containing a reactional medium, used to perform a desired conversion by enzymatic means. Enzymes used in this process are free in the solution or immobilised in particulate, membranous or fibrous support [1].
